This fashionable restaurant pays homage to the meatpacking district that was part of Gastown.

Do not be put off by its name, which, if you understand French, sounds rather grisly. Although it is nestled in Vancouver's first jail, the ‘slaughterhouse' incorporates the codes of contemporary decor and is a pleasing marriage between elegance and sobriety. The red brick walls are covered with paintings by local artists, the lamps are industrial, the ceiling is hung with chandeliers, and the cane motif tiles on the floor recall Parisian bistro chairs.

Trained by starred chefs, Lee Cooper puts his talent to fine dining with West Coast and French inspirations such as a terrine of duck foie gras aged in camomile, oysters from the Pacific in garlic butter, veal loin with turnips, black olives, dates and mint; as for dessert, indulge in a strawberry Bavarian cake with honey and white chocolate…
Bread, pasta, and fresh cheeses are homemade, and the wine cellar offers the best of the region.You will appreciate the cocktail bar early or late evening and the dimly lit upstairs dining room, but for a more intimate dinner, choose the sublime atrium, a bright glass courtyard that is calm and quiet.
